High-Calorie Highlight: Washington Squares

imageI love these!! I discovered them last week at Harrahs’s buffet and now I’m hooked. Made from just a few common ingredients and requiring no baking, Washington Squares make the perfect high calorie trail food. While I’m sitting here disassembling the delectable morsel, here’s my guess as to how they’re made.

1. Mix 2 cups graham cracker crumbs, 1/4 cup melted butter and 1/4 cup sugar and press firmly into a 13×9 pan.
2. Cover crumbs with 2 cups miniature milk chocolate chips and 1 cup dried shredded coconut.
3. Combine 2 cups walnut pieces, 1/2 cup light corn syrup (please substitute honey, agave or brown rice syrup,) 1/2 cup butter and 1/4 sugar in a saucepan or microwave safe bowl and heat to soft crack stage, 270° F–290° F, depending on how chewy or crispy you like your squares.
4. Once the desired temperature is reached, pour the walnut mixture into the 13×9 pan, distribute evenly, cool, and cut into squares. To make your squares extra froufrouy, drizzle with, or dip in, melted chocolate chips, although keep in mind they may not travel very well this way!
